About PantrySwap

PantrySwap is for the moment a recipe calls for something you do not have. It holds 1036 substitutions across 272 ingredients, each with an exact ratio, the reason it works and what it will change in the finished dish.

How a swap is written

The ratio is anchored to the original ingredient so you can act on it without arithmetic, for example “1 cup buttermilk = 1 cup milk + 1 tbsp lemon juice or white vinegar”. The reason names the mechanism, such as fat, acidity, starch or protein, so you can adapt it. Any loss in whipping, browning or flavour is stated on the card.

Each swap carries one of three ratings: Closest match for a near-identical result, Reliable for a small detectable difference, and In a pinch when it will get you through with a real change. Eggs are split by job, with separate pages for binding, leavening and moisture, because a flax egg binds and whipped aquafaba leavens.

Where the swaps come from

The substitution corpus is PantrySwap's own and does not cite an outside source for each swap. A few ratios vary from cook to cook, so treat any one as a starting point.

Allergens: what the notes do and do not cover

327 of the 1036 substitutes carry an allergen note. A swap without one can still contain an allergen, and diet tags describe ingredient categories, not brands: soy sauce is usually brewed with wheat, oats can be cross-contaminated, and vegan butter may be soy- or nut-based. PantrySwap cannot know what is in the jar in your cupboard, so read the label on the product you are using, and treat a severe allergy or coeliac disease as a medical matter rather than a recipe adjustment.

Who runs it

One independent developer builds and maintains PantrySwap, along with HerbMate, Matcha Almanac, FiberTally and ProteinTally. Each guide appears with the PantrySwap name in place of a personal byline, and its structured data gives authorship to the PantrySwap organization. No chef or dietitian is credited. The day printed with a guide is the last day its text changed.

Privacy and contact

Search, the converters, your pantry and saved swaps stay on your device; the privacy page has the detail. Spot a swap ratio that looks wrong? [email protected] is the place to say so.

Not dietary or medical advice. PantrySwap is a cooking reference. If you are managing a food allergy, coeliac disease, or any medically directed diet, your clinician and the product labels are the authority - not this site.
