Match the fat, not just the liquid

The plant milks are not interchangeable. Oat and soy carry enough fat and protein to behave like whole milk in baking; almond and rice are closer to skimmed and will make a thinner crumb and a paler crust. For anything creamy, full-fat coconut milk is the closest match to double cream.

Acidity matters where a recipe relies on it. Buttermilk and yoghurt are doing chemistry with the raising agent, so a dairy-free version needs the acid put back - a tablespoon of lemon juice or vinegar per cup of plant milk, left to sit for ten minutes.

Milk hides under other names: whey, casein, caseinate, ghee and lactose all mean dairy, and "non-dairy creamer" frequently contains caseinate.
