113 vegan swaps across 64 ingredients that need one. Swaps that contain no animal products at all. Note that honey, gelatin, fish sauce, Worcestershire sauce and most Parmesan are not vegan, which catches people out constantly.

This page lists only the ingredients where vegan is the reason you are substituting - the ingredient itself does not fit the diet and at least one of its swaps does. Ingredients that already suit it are in the full A-Z.

What actually goes wrong in vegan substitution

Most vegan swaps fail on function rather than flavour. Eggs do four separate jobs - binding, leavening, moisture and setting - and a flax egg only does the first two. Work out which job your recipe needs before choosing, because the right answer for a brownie is the wrong answer for a custard.

Fat behaves differently too. Butter is roughly 16% water and coconut oil is essentially none, so a straight swap makes shortbread that spreads less and cake that reads dry. Where a recipe creams butter with sugar, a solid vegan block beats an oil every time.

The traps are the ingredients nobody thinks to check: honey, gelatin, fish sauce, anchovy-based Worcestershire sauce, most Parmesan (animal rennet), and some sugars and wines clarified with bone char or isinglass.

Check the label, every time. A vegan tag describes the ingredient, not the brand in your cupboard. Formulations change, and shared production lines are common.
