Cornstarch substitutes, and how to pick one by the way it fails

Most cornstarch substitutions are one-for-one, which makes this look like an easy swap. It usually is. The trouble is that every alternative starch has a specific condition it cannot survive, and the conditions are different for each one - boiling, acid, dairy, or the freezer. Choose the wrong starch for your sauce and it will not thicken slightly less well; it will break, thin back out, or turn slimy.

So the useful question is not "what thickens like cornstarch?" but "what is this sauce going to do to the starch?" Answer that and the choice is usually obvious.

First, check it is cornstarch's fault

Cornstarch has its own limits, and a sauce that failed with cornstarch will often fail again with a substitute. It loses thickening power if it is boiled hard or held at a simmer for a long time, and acidic fillings break it down further. Lemon curd, cherry pie filling and anything with a lot of vinegar are all working against it.

It also has to be slurried into cold liquid before it goes anywhere near the pan. Dropped straight into something hot, the outside of each granule gelatinises instantly and seals the dry powder inside, which is where lumps come from. Add it late, stop cooking as soon as it thickens, and half the reasons to substitute disappear.

Arrowroot: the one for acidic sauces

One tablespoon of cornstarch becomes one tablespoon of arrowroot. It gelatinises at a lower temperature and holds up against acid far better than cornstarch does, which makes it the right answer for fruit fillings, sharp glazes and anything with citrus or vinegar in it.

Its failure mode is dairy. Arrowroot turns unpleasantly slimy when boiled hard or combined with milk or cream, so keep it out of cream sauces entirely. Slurry it into cold liquid, add it at the end, and take the pan off the heat as soon as it thickens.

Tapioca: the one that survives the freezer

Also one-for-one. Tapioca is a pure starch from cassava root that gelatinises at roughly the same temperature as cornstarch, so it thickens at about the same point in cooking and needs no adjustment.

It sets slightly stringier and glossier, with a faint sweetness that suits a fruit pie and can read as odd in a savoury gravy. Its real advantage is freeze-thaw stability - of the common starches it is the one that will not weep after a spell in the freezer, which is why it belongs in anything you plan to make ahead.

All-purpose flour: double it, and cook it longer

This is the one that is not one-for-one. One tablespoon of cornstarch takes two tablespoons of flour, because flour is only about half starch by thickening power - the rest is protein and fibre that contribute nothing to the set.

Flour sets opaque and matte rather than glossy, and carries a faint cereal flavour, so it is wrong for a clear glaze or a bright fruit filling and perfectly right for a gravy or a roux-based sauce. Cook it a few minutes longer than you would cornstarch to drive off the raw-flour taste.

Potato starch: fast, glossy, and cannot be boiled

One-for-one again. Potato starch has very large granules that swell fast and thicken at a lower temperature than cornstarch, giving a notably clear, glossy result.

Those same large granules are the problem: they rupture under sustained heat and the sauce thins straight back out. This one genuinely cannot be boiled. Add the slurry at the very end and pull the pan off the heat the moment it thickens.

Xanthan gum: powerful enough to ruin the dish

The ratio changes completely here - one tablespoon of cornstarch is a quarter to a half teaspoon of xanthan gum, roughly a sixth of the volume. Xanthan does not gelatinise at all; it thickens by tangling into long chains in water, so it works cold, works hot, and is indifferent to acid.

Overdosing is the real danger and it happens easily at these quantities. A little too much turns a sauce slimy, ropey and unpleasant, and there is no fixing it afterwards. Sprinkle it in slowly while blending or whisking hard - dumped in as a lump it hydrates on contact and you get gel beads that never disperse. Start at the bottom of the range.

Choosing in one line

Acidic filling: arrowroot. Going in the freezer: tapioca. Cream sauce or gravy: flour, doubled. Want maximum gloss and will not boil it: potato starch. Cooking gluten-free and confident with small quantities: xanthan, measured carefully.

If none of that applies, cornstarch was probably fine and the fix is technique - cold slurry, added late, taken off the heat as soon as it thickens.
