How to substitute eggs in baking, and what each swap actually does

Most egg substitution goes wrong for one reason: the cook looks up "egg substitute", finds flax, and puts a flax egg into a sponge cake. Flax binds beautifully and lifts nothing at all, so the cake comes out of the oven half its intended height and the swap gets the blame. The swap was fine. The question was wrong.

An egg is not one ingredient doing one job. It binds, it leavens, it carries moisture and fat, it emulsifies, it sets, and it browns - often several of those at once in the same batter. No single substitute covers all of that, which is why PantrySwap splits the egg into separate pages by job rather than offering one universal answer. First, work out what the egg is doing

Read the recipe before you read a substitution chart. The egg's job is usually obvious from what surrounds it: an egg in a meatball mixture is glue, an egg in a batter with no chemical leavening is lift, an egg in a brownie is moisture and richness, an egg beaten with sugar over a pan is a thickener.

Quantity is the other tell. One or two eggs in a mixture that also contains baking powder are almost certainly binding and enriching. Six eggs and no leavening means the eggs are the structure, and there is nothing on this page that will replace them.

Binding: the easy one

Binding is the job a substitute can genuinely replicate. An egg binds because its proteins coagulate in the heat and lock everything in place; a flax or chia egg binds because soluble fibre forms a sticky gel that grips the mixture in much the same way. Different chemistry, same result on the plate.

The ratio PantrySwap gives for a flax egg is one tablespoon of ground flaxseed to three tablespoons of water, and the chia version uses the same proportions. Both need to sit for five to ten minutes until visibly thick before they go into the bowl - the single most common reason this swap fails is impatience. Ground seeds only; whole flaxseed will not gel.

For savoury mixtures there is a starch route that skips protein entirely: mashed potato or fine breadcrumbs absorb moisture, swell, and hold a patty together physically. It gives a softer bind than egg, so chill the patties before they hit the pan and handle them gently.

Commercial egg replacer powders are blends of potato and tapioca starch with a leavening agent added, which is why they cover a little lift as well as binding. Follow the box rather than a general rule; the ratios differ meaningfully between brands. Their real advantage over flax and chia is that they taste of nothing.

Standard breadcrumbs contain wheat. Where gluten is also being avoided, use mashed potato or certified gluten-free breadcrumbs, and check the packet rather than assuming.

  • One or two eggs binding a mixture: a flax or chia egg will get you very close.
  • Three or more eggs: the egg is doing structural work too, and no single swap will carry it.
  • Rest the gel until it is visibly thick. Using it immediately is why this swap gets a bad reputation.

Leavening: the hard one

Whipped egg white is a foam of protein around air, and when it hits the oven the air expands while the protein sets around it. That is a genuinely unusual thing for a food to do, and almost nothing else in a kitchen does it.

Aquafaba - the liquid from a can of chickpeas - is the exception. Its dissolved proteins and saponins foam and stabilise remarkably like albumen, and it is the only common vegan ingredient that actually aerates rather than merely producing gas. PantrySwap's ratio is three tablespoons per egg, whipped to soft peaks, and it wants five to ten minutes of whipping, far longer than eggs need. An eighth of a teaspoon of cream of tartar stabilises the foam. Fold it in last and bake immediately, because it deflates faster than an egg-white foam does.

The other route is chemical rather than mechanical: baking soda and vinegar react on contact and release carbon dioxide straight into the batter. That gives lift but no structure, so the crumb comes out open and fragile. It works in a muffin or a plain quick cake; it will not build a sponge. Combine and bake at once - the gas starts leaving the moment they meet.

Where eggs are both the leavening and the structure, stop. An angel food cake is twelve egg whites and nothing else holding it up. There is no substitution that produces one, and a recipe written from the start to be eggless will always beat a converted one.

Moisture and richness: the forgiving one

In a brownie, a muffin or a dense quick bread, the egg is mostly liquid and fat. Those recipes are the most forgiving to convert, because what they want is a quarter cup of something wet and slightly viscous per egg - and PantrySwap's ratios for this job are all a quarter cup.

Unsweetened applesauce brings the moisture with pectin that holds a crumb together softly, and it adds no competing flavour. It contributes no fat, though, so a very lean bake can turn gummy. Mashed ripe banana behaves almost identically and browns a little better thanks to its sugars, at the cost of tasting unmistakably of banana - invisible in a spiced muffin or a chocolate cake, obvious in a vanilla one.

Blended silken tofu is the most neutral option of the four and matches an egg's moisture and protein closely, which is exactly why it beats fruit purées in anything where flavour matters. Blend it until absolutely no lumps remain; any texture left in the tofu shows up in the finished crumb. Expect a dense, fudgy result - excellent in brownies, heavy in a light cake.

Plain yogurt or buttermilk does the same job with fat and protein behind it, and the acidity tenderises the crumb as a bonus. If the recipe already contains baking soda, you get a little extra lift for free. It is not dairy-free, obviously, which is the one thing that rules it out.

Tofu is soy, one of the major allergens. Check the packaging, and treat a severe soy allergy as a medical matter rather than a substitution question.

Whites, yolks, washes and custards

Recipes that call for separated eggs are asking for two quite different ingredients. The white is structural protein with no fat; the yolk is fat, lecithin and colour. Swapping one for the other only works in one direction and only for some jobs.

By volume, one whole egg is about two large whites or two large yolks, and PantrySwap lists both exchanges. Two whites make a leaner, drier, paler result. Two yolks make a much richer and denser one with no aerating power at all. Going the other way is the dangerous direction: a whole egg carries a yolk, and any trace of fat kills a foam, so a whole egg can never stand in for whites being beaten to peaks.

Aquafaba covers the white on its own terms at two tablespoons per white, and it is the one vegan option that will make a passable meringue. Bake it low and slow, because aquafaba meringue browns faster than egg white does.

For an egg wash, aquafaba is again the closest match - one to two tablespoons brushed on gives a genuinely glossy skin. Milk or cream browns through the same Maillard reaction but sets matte rather than shiny, and melted butter or oil gives no gloss at all while still holding seeds in place.

Where the yolk is thickening a custard rather than enriching it, starch reaches a similar body by an entirely different route: a tablespoon of cornstarch slurried into two tablespoons of cold liquid per yolk. It is far more forgiving, since a starch custard can boil where a yolk custard cannot. What you lose is the lecithin, so a hollandaise or a mayonnaise cannot be made this way at all.

Reading the label

Egg substitution is very often allergy substitution, and the swaps introduce allergens of their own. Silken tofu is soy. Commercial replacers vary between brands and some contain soy or are milled on shared lines. Standard breadcrumbs are wheat. None of that is a reason to avoid them - it is a reason to read the packet on the product you are actually holding, every time you buy a new one.

How many eggs can I substitute in one recipe?

One or two is usually safe. Past that the eggs are almost certainly providing structure as well as binding or moisture, and replacing three or more with purée or gel gives a heavy, damp, under-risen result. At that point look for a recipe designed to be eggless rather than converting the one in front of you.

Why does my flax egg not work?

Almost always one of two things. Either it was not rested - the mixture needs five to ten minutes until it is visibly thick and gelled before it goes into the batter - or the flaxseed was whole rather than ground. Whole seeds will not release the mucilage that does the binding. The third possibility is that the recipe needed lift, and flax binds without leavening anything.

Can I use applesauce instead of eggs in a cake?

In a dense cake, yes, at a quarter cup per egg. In a light one, no. Applesauce supplies moisture and pectin but no fat and no lift, so it makes the crumb denser and moister and adds a little sweetness. That is exactly right for a brownie or a spiced loaf and exactly wrong for a sponge that was relying on beaten eggs to rise.

Is aquafaba really the liquid from a can of chickpeas?

Yes. Use the liquid from unsalted canned chickpeas, or reduce a low-sodium one slightly for a thicker, more capable foam. It whips in five to ten minutes rather than the two or three egg whites need, and an eighth of a teaspoon of cream of tartar helps it hold. The foam is less stable than egg white, so fold it in at the very end and get it straight into the oven.
