Can I use fresh marjoram instead of fresh sage?
1 tbsp chopped fresh sage = 1 tbsp chopped fresh marjoram. Marjoram shares sage's soft, slightly camphorous quality without the medicinal edge, and works with the same rich meats. Much gentler. In stuffing or a brown butter sauce you will miss sage's weight and may want to add a little more.
Can I use fresh thyme instead of fresh sage?
1 tbsp chopped fresh sage = 1 tbsp fresh thyme leaves. Both are heat-stable herbs that pair with pork and poultry, and thyme's resinous quality partly covers the ground sage's camphor occupies. Cleaner and more floral. The muskiness that makes a sausage taste like sausage will be missing.
